  2. Prepare 1/2 pound pork (small cube or ground)
  3. Take 1 Tbs. Soy sauce
  4. Take 1/2 tsp. Salt
  5. Take 1 Tbs. Hot sauce
  6. Make ready 1 Tbs corn starch
  7. Take Sauce
  8. Prepare 3 Tbs. Peanut butter or tahini
  9. Prepare 5 cloves garlic
  10. Take 2 inch piece fresh ginger
  11. Take 2 Tbl. Soy sauce
  12. Take 4 stalks scallion (green onions)
  13. Make ready 1 Tbs. Hot sauce
  14. Prepare 1 cup chicken broth
  15. Take Noodles
  16. Prepare 12 Oz. Noodles (spaghetti I use)
  17. Prepare 1 Tbs. Schezwan pepper corns
  18. Take Garnish
  19. Take Scallion, sesame seeds, chopped peanuts

Ladle on the sauce and top with the fried pork mixture. Sprinkle with the ground Sichuan peppercorns and serve. For those nights when you're craving extra saucy Chinese inspired noodles, but don't want to wait for take out. Steps to make Szechwan Noodles:
  1. If using hunks of pork, cut into about half inch cubes.

  3. Mix all meat ingredients in a bowl, let sit 15-30 minutes.
  4. Cut scallions small.
  5. Cut garlic and ginger into small dice.
  6. Heat a dry wok/stir-fry/skillet on medium heat.
  7. Put Schezwan pepper corns in pan. Toast until dark brown and starts to smoke. 4-5 minutes.
  8. Remove, cool, grind, set aside.
  9. Time your noodles so they are done about the same time as the rest. About 15 minutes from this point. If they get done a couple minutes early, I add a little butter and stir it in to stop then from sticking to each other.
  10. Add a couple Tbs. Oil to pan. Let it heat up. Add pork.
  11. You want the pork to have a slightly crisp outside. Best way is to let it sit a minute, stir, sit, stir, repeat until done.
  12. Remove pork to a plate with paper towels to drain.
  13. You should have about a couple Tbs. of oil left.
  14. Add hot sauce, peanut butter (or tahini), soy sauce, stir until well mixed.
  15. Add scallions, garlic and ginger to hot oil. Stir for a minute.
  16. Add chicken broth, stir.
  17. Bring sauce to a boil, dinner until think, 3 or 4 minutes.
  18. Turn off heat.
  19. Place noodles in a serving bowl.
  20. Add pork to noodles.
  21. Put sauce over noodles.
  22. Sprinkle with ground Schezwan pepper corns
  23. Garnish and serve.

Szechuan style cold noodle (Vegan version) is known as Szechuan Liangmian. With a long history, it is been known as one of most famous Szechuan street snack.
