This simple vegan jambalaya is a super tasty, satisfying and nutritious vegan recipe, and a delicious dinner dish made with beans instead of meat. Jambalaya is a dish from Lousiana, which has its origins in the Spanish and French cuisines, especially in the Spanish dish paella and jambalaia, a French dish from Provence. This vegan jambalaya is quick and easy to make, full of spice and flavour and a great one-pot meal.

To get started with this recipe, we have to first prepare a few ingredients. You can have jambalaya (vegan) using 15 ingredients and 8 steps. Here is how you cook it.

The ingredients needed to make Jambalaya (Vegan):
  1. Prepare 2 tbsp olive oil
  2. Make ready 1 1/2 cup diced bell peppers (any color will do)
  3. Make ready 1 1/2 cup diced onions (I use white onion)
  4. Take 1 1/2 cup diced celery
  5. Take 1 packages tofurky sausages
  6. Make ready 2 cup imagine organic no chicken stock (or veggie stock)
  7. Take 2 clove garlic
  8. Prepare 1 tbsp parsley
  9. Take 1 tbsp basil
  10. Prepare 2 cup rice
  11. Make ready 1 can tomato sauce
  12. Make ready 1 can diced tomatoes (optional)
  13. Prepare 1 creole seasoning (tommy chacheres)
  14. Make ready 1 salt
  15. Take 1 pepper

Instead, I added a tin of kidney beans, which worked perfectly. You could add some slices of vegetarian sausage too, if you fancy it. This vegan jambalaya recipe is super easy to make with basic pantry staples. Tomato-y rice flavoured with loads of herbs and spices and bulked up with celery, peppers and a selection of mixed beans make a hearty, warming and filling quick weeknight lunch or dinner.

Steps to make Jambalaya (Vegan):
  1. Dice all vegetables and the package of tofurky sausages.
  2. Once thats done, drop the olive oil into a decent sized pot and put it over medium heat.
  3. Once oil is hot, add onions, bell peppers, celery, garlic and sausages and saute for about 10 to 15 minutes.
  4. Next add the basil and parsley to the mix followed by the tomato sauce, diced tomatoes and stock.
  5. Next drop the rice in. If using brown rice you may need to cook a bit longer/add more water over time.
  6. cook uncovered and stir occasionally until the rice is tender usually about a half hour or so.
  7. Once rice is tender add salt, pepper and creole seasoning to taste. If you like iy a bit on the hotter side you can dice scotch bonnet peppers into the mixture or add a squirt of your favorite hot sauce.
  8. Garnish with parsley

Turns out jambalaya is just as good without the meat and fish! (Side note: Make sure you're using a vegan Worcestershire sauce if you're cooking this for strict vegans or vegetarians!) Even now that I'm back to being an omnivore, this vegan jambalaya recipe is still one of my favorites for a quick dinner or a Meatless Monday dish. Except for the vegan sausage, you will find all of these ingredients in any regular supermarket. If you have problems finding the vegan andouille sausage, you could also use smoked tofu instead. I used cooked rice for my vegan jambalaya to make the recipe even faster. I usually cook a big batch of rice, so I have it ready for busy days.
