I love the soft, chewy texture of these thick noodles. Extra saucy Asian inspired noodles with bell peppers, chicken, fresh basil, and an addicting sweet and spicy sauce. All made and ready for eating in just about twenty minutes. Doesn't get better than these noodles on a busy night.

Steps to make Spicy chicken udon noodles:
  1. Heat sesame oil in wok and add chicken cubes. Add veg cut in small pieces, or spiralized. (You can add the veg you like most instead but remember to increase amount of sauce if you add more than suggested)
  2. Mix the different ingredients to make sauce while chicken cooks.
  3. Add noodles to the wok and loosen up
  4. Finally add prepared sauce to the wok, heat through and serve

If soaking udon noodles, gently stir to loosen udon noodles and separate, then drain. If you follow me on Instagram you've probably seen the picture I took in front of my house with all the lovely snow. Summer isn't even over and yet here it's snowing. Test for doneness by removing noodle from pot, running it under cold water, then biting. Udon shouldn't be hard in the middle. *I much prefer Soft or Frozen Udon noodles.
