  1. Get 500 g 7% fat turkey thigh mince,
  2. Prepare 1 medium egg, beaten,

  4. Get 1 tsp garlic granules,

  6. Make ready White breadcrumbs, around 5-6 heaped tbsp worth,
  7. Prepare 1 1/2 tbsp Cooking oil (I used vegetable)

Steps to make Turkey Schnitzel:
  1. Preheat your oven to 180 (fan) or gas mark 6. Line a large baking tray with foil and place a wire rack over it and set aside. Take the mince meat and season with the garlic granules, oregano, salt and pepper. Mix it well and mash it up so it sticks together better so you're able to form it into a large pattie.
  2. I find it best to place half the mince onto a large chopping board, and then flatten it down into a large thin oval pattie, keeping the edges nice and neat. Wet your hands before working the meat so it doesn't stick too much. If there's any gaps or cracks that form or the edges get too thin simply fold them in on themselves and then pat the mince down again until thin but solid.
  3. Heat up a large non stick frying pan and add half the oil. Using a basting brush, brush egg over the top of the pattie then sprinkle over breadcrumbs and then pat them down neatly with your hand. Using a spatula, loosen the underneath up so it isn't stuck to the chopping board then add it breadcrumb face down into the hot pan. Once it begins to cook, add egg wash and breadcrumbs to the top whilst it's in the frying pan.
  4. After around 3-4 minutes carefully flip the schnitzel to fry the other side, fry until the breadcrumbs are golden.
  5. Now do the exact same thing with the other half of the mince meat. (I do this one by one as they won't both fit in the frying pan at the same time). So mould it, egg wash one side, add breadcrumbs etc.
  6. Once both schnitzels are golden transfer them to the lined baking tray on the wire rack and bake in the oven for 20-25 minutes until cooked through.
  7. Serve up immediately with your chosen sides! So delicious.
