  2. Make ready 3 Cups Whole Wheat Flour
  3. Get 1.5 Tsp Salt
  4. Get 5 Tbsp Ghee
  5. Prepare For Litti Filling
  6. Prepare 1.5 Cup Sattu flour
  7. Take 1/4 cup Fresh Coriander
  8. Take 1 finely chopped Onions
  9. Take 3 Finely chopped Green Chillies
  10. Take 1 Tbsp Roasted Cumin Seeds Powder
  11. Take 1.5 Tsp Red Chilli Powder
  12. Take 1/4 Tsp Carom Seeds
  13. Prepare 1.5 Tsp Salt
  14. Get 1 Tsp Garlic Paste
  15. Make ready 1/2 Tsp Ginger Paste
  16. Get 1 Tbsp Mango Pickle Paste
  17. Prepare For Chokha
  18. Take 3 Potatoes mashed
  19. Prepare 2-3 Tomatoes
  20. Get 3 Green chillies chopped
  21. Get 1/4 th cup fresh coriander
  22. Get 1 Tsp Garlic Paste
  23. Prepare 1/2 Tsp Ginger Paste
  24. Prepare 1.5 Tsp Salt
  25. Prepare 1.5 Tsp Roasted Cumin Seeds Powder
  26. Get 1 Tbsp lemon juice
  27. Take 2 small coal pieces

Litti Chokha is a traditional dish that has its origin from the state of Bihar in India. Whole wheat dough balls are filled with sattu, a flour made from roasted bengal gram and eaten with chokha, a spicy. Litti Chokha is a traditional dish eaten mainly in Bihar and Jharkhad. It can be had for lunch, dinner or you can make it on your holidays and you will surely love it.

Steps to make Litti Chokha:
  1. Firstly, we will knead flour for Litti dough.
  2. So in a big plate or bowl, take 3 cups wheat flour, add salt and ghee and mix very nicely.
  3. You should get such texture.
  4. Now taking normal water gradually, knead the flour into medium dough normally. Here i have used more than 1/2 cup water.
  5. Now cover with cloth and let it rest for minimum 15-20 minutes.
  6. Now lets prepare filling to be filled inside litti.
  7. In a big mixing bowl, take sattu flour, add salt, red chilli powder, carom seeds, roasted cumin seeds powder and dry mix.
  8. Now add onions, green chillies, fresh coriander, ginger garlic paste.
  9. Lastly add most important element-Mango pickle! Mashed ! Mix everything nicely.
  10. Now it will be still powdery which will not be comfortable to be used as filling inside.
  11. So sprinkle little water until the filling becomes muddy in colour and gets the texture to get collected as shown.
  12. Now coming back to Litti Dough- After the resting time is over, grease with little ghee again and knead a little.
  13. Now take a small portion of dough and spread it like small hollow round shape as shown.
  14. Take the filling and keep inside it, covering and closing from all sides very carefully making into a smooth ball.
  15. Now brush it with ghee from all sides.
  16. Preheat a tandoor or Otg for 10 minutes. Here i am making litties in tandoor today.
  17. Place all the littis on the rod. Cook for 15 minutes at low medium flame flipping sides in between.
  18. Cook until half charred and half light brown.
  19. Please note: if you are baking in otg then bake at 180 with both rods on in a preheated oven. You can also bake in Appam pan but it takes 30-40 minutes and size is very small
  20. Litti is ready. Dip in Ghee at the time of serving.
  21. Now making chokha- it is authentically made with potatoes and Eggplant but not everybody eats eggplant. So i have made chokha here from potatoes goving them smoky flavour through coals in order to compensate for the eggplant roasting.
  22. So firstly roast the tomatoes on gas.
  23. Then let it cool down and peel skin. Cut into pieces for easy mashing.
  24. Now in a big mixing bowl, take mashed potatoes, roasted tomatoes, green chillies, coriander leaves, ginger garlic paste, lemon juice, salt and roasted cumin seeds powder.
  25. Mix and mash everything nicely! Now we will give smoky flavour to it.
  26. Burn coals on a burner.
  27. Place the coals in a steel bowl and place in between the chokha.
  28. Pour the ghee on top of coal and immediately cover with plate to capture all smoke inside.
  29. Leave for 5 minutes as it is.
  30. After 5 minutes, remove the coal bowl. Mix and your chokha is also ready!
  31. Now serve the litties hot with spicy chokha and Tomato Garlic chutney. Accompany with Green mint chutney and spicy onion salad for enhanced taste.
