  1. Peel avocado, cut in half, remove seed, chop as prefered or mix till creamed. Handle the fruit gently because it should be too soft.

Brush both sides of the bread slices with olive oil. Top a bread slice with sliced avocado. Top with sliced egg followed by tomato, basil leaves, mozzarella cheese and a pinch of salt and pepper.
