The ingredients needed to make Icy Cold Somen:
  1. Make ready 4 servings Somen Noodles *OR Rice Vermicelli or Capellini (Angel Hair Pasta)

  3. Make ready ‘Yakumi’ (Condiments)
  4. Get *Note: ‘Yakumi’ is herbs and spices to add extra flavours to the dipping sauce. You can add any of the following
  5. Take Spring Onion, Toasted Sesame Seeds, Grated Ginger, Shredded Nori, Wasabi, Chilli Powder, Shiso, Myoga Ginger, etc

Boil water and add Somen to the boiling water. Cook for a minute and strain. Wash Somen in running water, rubbing. Somen (or sōmen) is a very thin noodles served cold which makes it a perfect summer dish.

Instructions to make Icy Cold Somen:
  1. Cook Somen Noodles as instructed. You don’t need to add Salt to the water as Somen Noodles are salted.
  2. When noodles are cooked, drain and rinse well in COLD water, and place the noodles in a serving bowl with cold water and some Ice Cubes.
  3. Serve the noodles with the chilled ‘Mentsuyu’ dipping sauce and Yakumi.

Noodles are served in chilled water and the dipping sauce is also chilled. It is a very simple dish but wonderful. Of course, somen can be enjoyed hot, but for a true Japanese summer experience, you'll need to add ice. Simply add boiling water to three centimetres below the inner line.
