The ingredients needed to make Masala Chicken:
  1. Prepare 600 gms Chicken thighs boneless skinnless
  2. Make ready Salt
  3. Take Red chilli powder
  4. Take 1 Stair anise
  5. Get 1 teaspoon fennel seeds
  6. Prepare 3-4 cloves
  7. Prepare 1 teaspoon cumin seeds
  8. Get 1/2 cinnamon stick

Chicken gets cooked easily so it is important to be careful in this preparation or it would soften too much and mix in the gravy. It's easy to confuse these two Indian dishes: they're both chicken in a creamy, tomato-based, spicy sauce. However, Indian Butter Chicken is creamier and sweeter than Chicken Tikka Masala, which is spicier and more intensely flavored. Butter chicken is also made with butter instead of oil.

Steps to make Masala Chicken:
  1. Dry roast the spices in a pan. Turn off the stove when you can smell the spices.
  2. Marinate the chicken with 2 tablespoons of greek yoghurt, 1 tablespoon oil, 1 teaspoon salt and 1 teaspoon turmeric. Cover it with the cling film and put it in the fridge overnight or at least 3-4 hours before cooking.
  3. Roughly chop 2 red onions and peel garlic. Blitz it in a grinder with the roasted spices.
  4. In a deep pot, heat 2 tablespoon oil. Add the onion spices mixture and cook at medium heat. Keep stirring so it doesnt stick to the base of the pot.
  5. After about 5 minutes, add 1 teaspoon each of chilli powder, fennel seeds powder, and turmeric powder, salt.
  6. Add 1/4th cup of water and cook till everything is nicely mixed.
  7. Add chicken. Toss it nicely so the chicken is well coated with spices.
  8. Cook at medium flame for 20-25 minutes. Stir occasionally and add 1/4 cup of water.
  9. Serve it with rice or chapati.
