The ingredients needed to make Szechuan Fried Rice:
  1. Take 4 cups Cooked Rice
  2. Get 350 g Chicken Meat (minced)
  3. Take 100 g Szechuan Pickles (washed, drained, chopped)
  4. Prepare 2 Tbsp Chilli Bean Paste (Dou Ban Jiang)
  5. Get 1 Tbsp Salted Black Bean (washed, drained, minced)
  6. Get 20 g Garlic (minced)
  7. Prepare 20 g Ginger (minced)
  8. Take 2 pc Eggs (whisked)
  9. Take 30 g Spring Onions (chopped neatly, whites and greens separated)
  10. Take 6 Tbsp Cooking Oil
  11. Get 2 tsp Sugar
  12. Take 1 tsp Light Soy Sauce
  13. Get 1 Tbsp Szechuan Pepper (ground)

It is sometimes served as the penultimate dish in Chinese banquets, just before dessert. Szechuan Scallops - juicy and succulent scallops stir fry with San-J Szechuan sauce. So good and best served with rice. This fried rice is called one pan Szechuan chicken fried rice because of the chile paste (sambal oelek) added for a good kick of heat.

Steps to make Szechuan Fried Rice:
  1. EGG; add 1 Tbsp of cooking oil snd cook the egg scrambled. Remove and set aside.
  2. CHICKEN; Heat 2 or more Tbsp of cooking oil until hot. Fry the szechuan pepper for 30 seconds or until fragrant. Then add 50 g of the szechuan pickles, mix well and fry that for 1 minute. Next add the chicken and cook it until brown on both sides. Remove and set aside.
  3. PASTE; Heat another 2 or more Tbsp of cooking oil until hot and fry the ginger, and garlic until fragrant. Then add the black beans and cook that for 30 seconds. Then add the chilli bean paste and fry or until the oil becomes red (30 seconds).
  4. RICE: Then, add the rice and mix well. Then add the remaining szechuan pickles and mix well. Taste the fried rice; if it isn't too salty then add just 1 tsp light soy sauce and mix well.
  5. ASSEMBLY; Now add in the chixken and the egg and mix well. Turn off the heat. Serve and garnish with spring onions.

This recipe is a little different from your regular fried rice as the rice is. Do you order green beans with your fried chicken with the justification that it makes the meal slightly healthier? This is a Szechuan dish and hoisin sauce is not a common ingredient in the cooking. Triple Szechuan Fried rice,is a complete meal in itself,contain fried rice,hakka noodles and gravy in one go.
