  1. Boil chicken, allow to cool and shred chicken into little strips
  2. In seperate bowl Mix cans of soups jalapenos (your choice of hot or mild and how much) and 1 cup of chicken broth (from boiled chicken)
  3. In 8x11 dish layer tortilla, shredded chicken and soup mixture.
  4. Continue layers of tortillas, chicken, soup to fill up pan.
  5. Bake in oven for 350 degrees for 30 minutes. Remove add shredded cheese to top and place back in oven for 5 minutes, or until cheese is melted.
  6. We like a dollop of sour cream on our serving. Enjoy

This ranch chicken casserole is super comforting and has become a family favorite for busy weeknights! I've been making this for years - it's a family favorite and is classified as Tex-Mex. There are many variations of the original recipe - I've also tried to include some of those variations or options in my recipe. Although, I, personally, believe the original is the best.
