  5. on microwave plate stack tortillas and cover with paper towel, microwave 1 min.
  6. place 1/4 cup chicken mixture along middle of each tortilla, roll up and place seam sides down
  7. pour remaining soup mixture over tortillas. sprinkle with remaining 1 cup of cheese.
  8. bake about 30 min or until cheese is melted and sauce is bubbly

Also, don't use corn tortillas, as these have a tendency to break and be hard to roll. Whatever you do, though, don't forget the fresh. Use tongs to toss the mixture and coat the chicken and cheese with the sauce. In this Chicken Enchiladas recipe, I used shredded chicken breast, but here's a few more ideas.
