  6. In the morning, take out the dough. Stretch and reshape then rest for one hour.
  7. Repeat and shape the dough into a ball by pulling the corners into the middle again. Proof for the final time for one hour.
  8. Sprinkle flour over the dough. Place the dough into a lined bread in or dish. Score the top with a sharp knife several times. Cover loosley with foil or a lid. Put into a preheated oven at 220C for 20-25 minutes.
  9. Uncover and bake for a further 30 minutes until golden.
  10. Slice and enjoy.

Spray the loaves with lukewarm water and dust generously with flour. Make two fairly deep diagonal slashes in each; a serrated bread knife, wielded firmly, works well here. Remove it from the oven, and cool on a rack. Add milk and softened butter or margarine. Sourdough bread is made by the fermentation of dough using naturally occurring lactobacilli and yeast.
