The ingredients needed to make Indian Summer Delight:
  1. Take 500 ml milk
  2. Take 1 cup vermicelli (sevaiyaan)
  3. Take 1/4 th cup sugar
  4. Get 1/4 th cup dry fruits and nuts roughly chopped
  5. Take 2 tbsp clarified butter (ghee)
  6. Get 2 cups mango puree
  7. Make ready 4 tbsp sugar
  8. Get 40 gms China grass
  9. Prepare 2 cups water
  10. Get some strawberry or raspberry syrup
Instructions to make Indian Summer Delight:
  1. Soak China grass in 1 cup of water.
  2. Meanwhile heat some ghee in a pan add some chopped nuts and dry fruit. Now add vermicelli and roast it well till it gets golden brown. Then add milk sugar and allow it to simmer on low flame for about 5- 6 minutes. Now your vermicelli mix is ready keep it aside.
  3. To form jelly:- boil 1 cup water and add soaked China grass in it. Stir it continuesly till it gets dissolved in water. Now add half of this boiled China grass to the vermicelli mix. In a greased pot pour this vermicelli mix and refrigerate it for 5-7 minutes.
  4. Now on another side in a pan heat mango puree add sugar in it give it a nice mix till sugar gets dissolved.
  5. Add the remaining boiled China grass to the mango puree. Stir it well. Just make sure that there are no lumps in it.
  6. Now cool this mango mix and then pour it on the vermicelli mix.
  7. You can do vice-versa also. Bottom layer of mango puree and top layer of vermicelli (I did this way only).
  8. Top it with remaining chopped nuts n dry fruits. Allow it chill till the jelly is nicely set.
  9. While serving just drizzle some rasberry or strawberry syrup and serve it chill…!
