  25. Take 1 medium eggplant, roasted, skin discarded & mashed

Litti basically consists of wheat and sattu (powdered gram )formed into balls with spices, and then dipped in ghee (clarified butter). Traditionally litti were roasted over"chulha' but now due to non availability of firewood these are prepared either on gas ??? Litti Chokha is a traditional dish eaten mainly in Bihar and Jharkhad. Instructions to make Litti Chokha:
  1. Roast the eggplant and boil the potato.
  2. To the mashed eggplant and potato, add all the above mentioned ingredients.
  3. Mix well and keep aside.
  4. Take 3/4 cup of roasted chana (Gram) dal.
  5. Grind to a fine powder.
  6. To it add rest of the ingredients for stuffing.
  7. Mix well and keep aside.

  9. Knead into a stiff dough with required quantity of water. Cover and keep aside.
  10. Divide the dough into 8-9 equal portions.
  11. Roll out each portion with your fingers into a small poori. Make a hollow and put 1 tbsp. of the stuffing in it.
  12. Bring all the edges together and make a round ball. Flatten it slightly. Fill rest of the dough with the stuffing and keep aside.
  13. Heat oil in a pan and gently slide the Litti into it…..
  14. ……and fry on a medium flame on all sides till golden in colour.
  15. Drain on a kitchen towel.

  17. With green chilies and sliced onion.
