  1. In a medium pot, add heavy cream, water and salt on medium-high heat.
  2. Once the cream mix starts to steam, add in the grits and cook for 3 minutes.
  3. Once the grits start to thicken add in cheese and cook for another 2-3 minutes until cheese has melted and grits are at desired thickness. Be sure to turn the heat down to medium-low and constantly stir the grits until the cheese has melted completly.
  4. While the grits are cooking, in a seperate pan add butter and melt on medium-low heat.
  5. In a bowl season shrimp with below seasonings.
  6. Once butter has melted add in saffron and stir for 30 seconds before adding in the shrimp. Cook on medium-high heat for 5 minutes, or until shrimp has cooked through and is pink. Then toss in green onions, and remove from heat.
  7. Serve grits topped with shrimp and a sprinkle of cayenne pepper!

If there's anyone out there who doesn't love this southern classic (for reasons other than allergies, and even then, I'm still. Saute the shrimp, garlic and seasoning in drippings until shrimp turn pink. Serve with grits and sprinkle with onions. Mine were apparently the kind used more for polenta (my first time buying and cooking grits) so they were a finer grind and therefore more solid than creamy. Cheesy grits, spicy shrimp, crispy bacon and fresh green onions make the ultimate comfort food!
