I used chicken breasts for this recipe, but chicken thighs would be delicious too! I am making this one skillet chicken dinner smothered in garlic and mushroom cream sauce on repeat this year. Place chicken pieces in a medium bowl, sprinkle the cajun seasoning over and toss to coat. In a large, deep skillet sauté the garlic in the butter for about two minutes.

  10. Add the chicken and the sauce to the sauteed ingredients and simmer for 15 minutes. adjust seasonings as desired.
  11. Take out the chicken and toss the pasta with the sauce and the parsley and scallion greens.

Add the red and green peppers to the skillet. Reduce heat. (Now is a good time to start boiling water for the pasta.) Mix together the cornstarch and cold water until dissolved - I like to use a coffee mug. Cook, stirring gently, until the sauce returns to a boil. Boil for one minute, then remove from heat and set aside. This recipe can easily be converted into a chicken and mushroom pasta bake with a few easy changes.
