  6. Prepare 1/4 Tsp Asafoetida

Instructions to make KATKI  IN MICROWAVE            (GUJARATI  PICKLE):
  1. Take raw Rajapuri Mangoes, peel them and fine chop them.
  2. Take the chopped mango in a container, add salt, sugar and stir well. Stir it frequently. Cover it and leave it overnight so that the sugar melts.
  3. Once the sugar melts we can Microwave. Take around 2 Cups I.e around 500 gms of the mixture in a Microwave safe bowl.
  4. Microwave on High for 4 minutes.
  5. Remove the bowl.stir well again Microwave on High for 4 to 5 minutes. Stir well. Let it rest for 2 minutes, stir well and test for the sugar syrup. Put 2 to 3 drops of sugar syrup in a small plate The syrup should form a pearl drop. It should not spread.
  6. Take the microwaved katki in a container and further let it cool. Once the Microwave process is complete let the mixture cool down completely.
  7. After it cools completely add red chilli powder, hand crushed cumin, asafoetida and mix properly.
  8. Can be stored in an airtight container for full year. Can be had with Dhokla,Paratha, Muthiya, etc.
