The ingredients needed to make Hilsa Biryani:
  1. Get 4 pieces hilsa fish (approx 100 gram each)
  2. Prepare 1 cup basmati rice
  3. Prepare 2 tbsp yogurt (beaten)
  4. Prepare 1 medium size onion (finely sliced)
  5. Prepare 3 tbsp onion paste
  6. Prepare 1 tsp Kashmiri red chilli powder
  7. Prepare 2 tsp turmeric powder
  8. Get 2 tsp cumin powder
  9. Take 1 tsp coriander powder
  10. Prepare 4 pods green cardamom
  11. Make ready 1 small cinnamon stick
  12. Make ready 2 bay leaves
  13. Make ready 3-4 green chillies (slit)
  14. Make ready 4 tbsp mustard oil
  15. Get 2 tbsp ghee
  16. Make ready 2 tbsp milk (lukewarm)
  17. Get 1/2 tsp saffron
  18. Prepare 2 tsp garam masala
  19. Prepare to taste Salt

We ended the main course with the Ilish Biryani be weary of the numerous kaantas. They also have chicken and mutton variants, which are available only on weekends. Doi Ilish is a typical Bengali Hilsa Recipe, where raw Hilsa fish is steamed in Yogurt and Mustured Sauce. Doi Ilish should be served with Steamed rice.

Instructions to make Hilsa Biryani:
  1. Wash and soak the rice in water for 30 minutes.
  2. Mix turmeric powder, coriander powder, cumin powder, Kashmiri red chilli powder with a little water & make a thick paste & keep aside.
  3. Now pour generous amount of water in a pan.Add green cardamom, cinnamon,bay leaves and ghee in the water.Let the water come to boil and then add the soaked rice into it.
  4. Let the rice cook till 85%.When done drain the water.
  5. Soak saffron in milk,add ghee in this mixture with a spoon,give a stir & set aside.
  6. Marinate the fish pieces with a little turmeric powder and salt.
  7. Now add mustard oil in a heavy bottom pan or Kadai.Fry fish pieces for just 30 seconds, when done take them out in a plate & keep aside.
  8. Add the sliced onions in the same oil and fry till golden and keep aside when done.
  9. Now add onion paste in the same oil and saute for 3-4 minutes.Add the spice paste and saute for 2 minutes more.
  10. Add salt and yogurt and mix on low flame,add some water,give a nice stir and let it simmer for few minutes.
  11. Add the fish pieces into the gravy.
  12. Cover and cook on a low flame for 1-2 minutes.
  13. Remove the lid,flip the fish pieces and repeat the process.
  14. Now take out the fish pieces with a little gravy.
  15. Spread fried onion on rest of the gravy.
  16. Now add a layer of rice, place the chillies and fish pieces along with the gravy.This is how first layer of hilsa biryani is done.
  17. Now prepare last layer with rest of the rice.Sprinkle rest of the gravy, fried onions and saffron mixture with a spoon.
  18. Now cover the kadai with an aluminium foil and close it with the lid.
  19. Let it cook on a low flame for 8-10 minutes.
  20. After 10 minutes switch off the flame.
  21. Open the lid before serving.
  22. Take some portions of biryani in a plate.
  23. Garnish with some fried onion on the top.
  24. Serve hot.
