Place the fish in a roasting tin. Cut the garlic into thin slivers and push into each slit. Season well with salt and pepper then wrap the parma h am around the fish trying to cover all the flesh. Pour over the red wine and then drizzle with oil.

  2. Place the monk fillet (cut in smaller pieces depending on the size) on to parma ham and put a slice of butter and chopped chives on top.
  3. Gently wrap the parma around the fish. I just used 1 slice of ham each but use two if your fillet it bigger
  4. Place some butter on the pan and briefly cook the wrapped monkfish for about 3 minutes
  5. Place the vegetables and the monkfish on the tray and put it in the over for 20 min
  6. Sit back for 20min and it’s done!
