Kimchi, Pork, Prawn, Chili and Potato Stew. Instead of sweet chilli sauce this time I used my home made chilli jam and worked wonders. In a large pot or roasting pan, stir to combine the fish sauce, chili sauce, sugar, mirin, sriracha and chili paste. Add the pork to the pan.

  2. Put some oil in the hot pan and fry some sliced pork, when the pork is cooked put the kimchi with the pork to stir fry for few minutes and then add garlic and also stir fry till cooked. Once the garlic is also cooked then put in sliced potatoes and stir fry till cooked. Add water to cover and let it cook for at least 30 mins.
  3. After 30 mins or so go to check the potatoes make sure they are just soft. Add the chili to cook for few minutes and then add the prawn last to cook for a short time.
  4. Once the prawn is cooked add some sliced spring onion. Here we go the dish is finished. Very simple and yummy dish.

Finish the stew by topping it with perilla leaves, enoki mushrooms, more green onions and optionally crown daisies. I did this as a mix of a traditional kimchi jigae and a good ol' regular stew. Kimchi jigae is usually made with thinly sliced pork belly, but I went with thick slab belly to take it over the top. Along with the belly and kimchi, I also added in the usual suspects in any regular homestyle stew: onions, carrots and potatoes. Heat vegetable oil in a medium pot over medium-high heat.
